WANTED: Recipies and/or Cooking Tips!


Please share your (preferably simple) yummy recipes and cooking tips!

ok you asked for it:
Baked Beans
Wash: 4c dried beans [navy or great
northern]
Add: 8c water
2 tsp dry mustard
1c brown sugar
3T molasses
1/2# diced bacon
1 small onion
2 1/2 tsp salt
1/4 c ketchup
1/4 tsp pepper
Bake at 200 from 10:00 pm til morning. OR
200 from morning til supper. OR
300 for 5 hrs.
To degas the beans, soak overnight in 7-Up, diet or regular, or anything like 7-Up. Don't use all the water when cooking the beans

Biscuits
Combine: 2c flour
1/2 tsp baking soda
3/4 tsp salt
1T baking powder
Cut in: 5T shortening
Add: 1c buttermilk
Mix lightly to form dough. Knead; pat to 3/4" thick. Cut into biscuits and place 2" apart on ungr4eased baking sheet,. Bake 425 for 12-15 min til golden brown.
You can just drop by spoonfuls onto baking sheet.

Prepare real food. Use fresh herbs and spices. Learn what flavors you like, then you can create anything from a disparate supply. Cooking from a package or a spice blend or something like that makes it hard to learn what you are tasting.

With that in mind:
Sauted Greens
Choose swiss chard or spinach for mildest flavor and fastest cooking time.

Saute a little garlic in a pan with a touch of olive oil or butter.
Chop greens (if using chard, remove stems and chop like celery--saute with garlic) and rinse.
With water still clinging to the leaves add to your saute pan with garlic. Cover.
Let the greens wilt for a couple of minutes. Take the lid off, season with salt and pepper. Continue to cook, lid off, until greens are tender to your liking but still bright green!
Toss with lemon juice and a drizzle of olive oil. YUM.

Wine Sauce--perfect for pasta, mushrooms, beans, shrimp, or I suppose you could even add chicken, if you like chicken.

Melt butter 1-2 tablespoons in a pan. Like garlic? Use several cloves. Not so much, omit or use just a bit.
Finely mince a shallot and saute with garlic, or not, until transluscent and soft.
Pour in a cup of dry white wine and bring to a bubble. Watch the wine reduce by half--alcohol buring out.
Like it spicy? Sprinkle in some red pepper flakes.
From her you can add fresh chopped parsley or if you like it zingy I might suggest a mix of parsley and fresh mint or tarragon.

When cooking the sauce with mushrooms or beans, I recommend cooking these items with the garlic and shallot, THEN adding the wine. For shrimp or vegetables, add them as the wine is bubbling away for more of a "steaming/poaching" effect.

This takes literally 5 minutes to happen--the longest step would be boiling the noodles.

Sprinkle with parmesan cheese or toss with arugula!!

Betty Crocker. I started out with a simple spaghetti recipe from one of my mom's betty crocker cook books in junior high. It eventually became my own with all of the changes I made so that my family enjoyed it to its fullest. We have done the same with several simple recipes since: burgers, veggies, meatloaf (the word meatloaf sounds gross), etc. Betty Crocker puts out, I believe monthly, a small cook book with a theme (the grilling ones are my favorite) and they are fabulous.

I made these today...

3.5 lbs red potatoes
2 cups whipping cream
1 package herb flavored cream cheese

slice the potatoes into thin slices (if you have a food processor, that's speedy)
place in a baking dish - after you have a layer, sprinkle seasoning salt on them. Put another layer and sprinkle seasoning salt.

Blend the cream cheese and whipping cream. Pour mixture over potatoes.

Bake uncovered, 350 for an hour.

Result? YUM

One Last Thought From Me

Why not remember this act of love and sacrifice daily rather than just at Easter? Yes, this event is an indescribably joyous one because Jesus did rise from the dead but we should never forget how and why He suffered unimaginably before defeating Death and Hell itself on our behalf. He did so while thinking of you and me. In doing so he personally took on our sin, our pain and a debt we could not pay in order to provide a way to complete forgiveness and redemption. The truth is, either way death is not the end and being a “good person” isn’t a substitution for being truly forgiven.

God tells us that by simply believing Jesus rose from the dead, confessing and turning away from our sin and making the Bible the true foundation of our life, we will be forgiven for our sins and live eternally in Heaven.


As you may know, I am far from perfect and if you have doubts about that I’m sure you can find a multitude of people who can confirm that. I have made countless mistakes and bad judgments and will again in the future despite my best intentions. It is because of this that I am exceedingly thankful I can go directly to God and ask for help, ask for forgiveness and know that God's mercy is new every morning as I continually work to keep my foundation on God's Word. Truly accepting God's love, mercy and a true freedom offered in a life firmly anchored in His Word is something there simply aren't words to describe.


I have to admit that I regularly take that for granted and listening to the words in a song like “Via Dolorosa” is one way to help remind me of the sacrifice Jesus made on that cross. Deciding to live for Christ was without a doubt the best decision I made in my life. Don’t get me wrong, it didn’t solve all my problems and make my life perfect. But I have a peace and hope only God can offer and I know in God’s eyes He sees a child forgiven rather than condemned. Now that I am a parent I can’t even begin to imagine what it must be like for God to watch His children exercise their free will when they chose to reject Him rather than embrace the salvation He offers each of us.


Regardless of your feelings on God and Jesus I hope you enjoy the power of the images and music I posted. And thank you for taking the time to read my thoughts about what can be a very sensitive issue.
